Instructions
Drain the salmon: Open the can and pour off all the liquid. Place the salmon in the mixing bowl and break it apart with a fork until it is flaky and no large chunks remain.

Add the egg: Crack the egg directly into the bowl with the salmon. Stir with the fork until the egg is fully mixed in and the salmon looks evenly coated.

Mix in the oat flour: Measure the oat flour and sprinkle it over the salmon mixture. Stir until a soft, slightly sticky dough forms that holds together when pressed.

Shape the bites: Scoop small amounts of the mixture with a teaspoon and roll gently between your palms into balls about the size of a marble. Place them on the parchment-lined baking sheet with a little space between each one.

Flatten the bites: Use the back of a spoon or your fingertips to gently press each ball into a small disc about a quarter inch thick so they bake evenly.
