Instructions
Wash the produce: Rinse the celery stalks, blueberries, and cilantro under cool running water. Shake off excess water and pat dry with a clean towel.

Chop the celery: Trim the ends from the celery stalks. Slice each stalk lengthwise into thin strips then cut across into very small pieces about the size of a grain of rice.

Mash the blueberries: Place the blueberries in the mixing bowl. Press down firmly with a fork or potato masher until most berries are broken and release some juice but a few small chunks remain.

Chop the cilantro: Gather the cilantro leaves into a small pile on the cutting board. Chop them into fine pieces roughly the same size as the celery bits.

Mix the ingredients: Add the chopped celery and cilantro to the mashed blueberries. Stir in the water a little at a time until the mixture holds together when pressed but is not soupy.

Form the bites: Scoop small amounts of the mixture with a teaspoon. Roll or press each portion gently between your fingers into a compact bite about the size of a pea. Place on the tray.

Chill briefly: Set the tray in the refrigerator for 10 minutes so the bites firm up slightly before serving.
